Ingredients:
For the cauliflower:

1 large head of cauliflower (cut into bite-size florets)

¾ cup (90g) all-purpose flour

½ cup (120ml) water
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
½ teaspoon smoked paprika
-
Salt and pepper to taste
For the buffalo sauce:

½ cup (120ml) hot sauce (like Frank's RedHot)

2 tablespoons melted butter (or vegan butter)
-
1 tablespoon maple syrup or honey (optional)
Instructions:

Preheat Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. -
Make the Batter
In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and pepper until smooth. -
Coat the Cauliflower
Dip each floret into the batter, shake off excess, and place on the baking sheet. -
Bake the Cauliflower
Bake for 20–25 minutes, flipping halfway through, until golden and slightly crisp. -
Prepare Buffalo Sauce
While baking, mix hot sauce, melted butter, and maple syrup (if using) in a small bowl. -
Toss and Bake Again
Remove cauliflower from oven and toss with buffalo sauce. Return to oven for 10–12 more minutes until crispy and caramelized. -
Serve
Serve hot with vegan ranch or blue cheese dip and celery sticks.
Tips:

Make it gluten-free by using chickpea flour or a GF flour blend.

Air fryer method: Cook at 400°F (200°C) for 15 minutes, toss with sauce, then air fry again for 5 minutes.

For extra crispiness, add a tablespoon of cornstarch to the batter.
