Ingredients:

For the cauliflower:

  • 1 large head of cauliflower (cut into bite-size florets)

  • ¾ cup (90g) all-purpose flour

  • ½ cup (120ml) water

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon smoked paprika

  • Salt and pepper to taste

For the buffalo sauce:

  • ½ cup (120ml) hot sauce (like Frank's RedHot)

  • 2 tablespoons melted butter (or vegan butter)

  • 1 tablespoon maple syrup or honey (optional)


Instructions:

  1. Preheat Oven
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Make the Batter
    In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and pepper until smooth.

  3. Coat the Cauliflower
    Dip each floret into the batter, shake off excess, and place on the baking sheet.

  4. Bake the Cauliflower
    Bake for 20–25 minutes, flipping halfway through, until golden and slightly crisp.

  5. Prepare Buffalo Sauce
    While baking, mix hot sauce, melted butter, and maple syrup (if using) in a small bowl.

  6. Toss and Bake Again
    Remove cauliflower from oven and toss with buffalo sauce. Return to oven for 10–12 more minutes until crispy and caramelized.

  7. Serve
    Serve hot with vegan ranch or blue cheese dip and celery sticks.


Tips:

  • Make it gluten-free by using chickpea flour or a GF flour blend.

  • Air fryer method: Cook at 400°F (200°C) for 15 minutes, toss with sauce, then air fry again for 5 minutes.

  • For extra crispiness, add a tablespoon of cornstarch to the batter.
