 Cardamom Kulfi

Cardamom Kulfi is a traditional Indian frozen dessert made with slow-simmered milk, sweetened and infused with the warm, floral flavor of cardamom. Creamy, dense, and perfectly spiced, it’s the ultimate no-churn treat that’s both nostalgic and refreshing.

Ingredients:

  • 1 liter (4 cups) whole milk

  • 1/2 cup sweetened condensed milk

  • 1/4 cup sugar (adjust to taste)

  • 1/2 teaspoon ground cardamom

  • 2 tablespoons chopped pistachios or almonds (optional)

  • 1 teaspoon rosewater (optional)

Instructions:

  1. Simmer the Milk
    Pour the milk into a heavy-bottomed saucepan. Bring to a gentle boil, then reduce the heat and simmer, stirring frequently to prevent burning. Continue simmering until the milk reduces to about half its original volume. This will take around 30–40 minutes.

  2. Add Sweeteners and Flavor
    Stir in the sugar and condensed milk. Mix well until fully dissolved.

  3. Add Cardamom and Nuts
    Stir in the ground cardamom and chopped pistachios or almonds (if using). Add rosewater if desired for a floral note.

  4. Cool the Mixture
    Let the kulfi mixture cool to room temperature, then pour it into kulfi molds, small cups, or popsicle molds.

  5. Freeze Until Set
    Freeze for at least 6 hours, preferably overnight, until completely firm.

  6. Unmold and Serve
    To unmold easily, run warm water over the outside of the mold for a few seconds. Serve immediately.

Tips:

  • Stir constantly during simmering to avoid scorching the milk.

  • For a smoother texture, strain the mixture before freezing.

Serving Suggestions:

Garnish with crushed pistachios, saffron strands, or dried rose petals for a festive touch. Pairs wonderfully with fresh mango or a cup of masala chai.
