Classic Strawberry Pie

Ingredients:
For the crust:

1 pre-baked 9-inch pie crust (store-bought or homemade)
For the filling:

1 cup (240ml) water

1 cup (200g) granulated sugar

3 tablespoons cornstarch

3 tablespoons strawberry-flavored gelatin (Jell-O)

1 tablespoon lemon juice (fresh)

1½ lbs (about 700g) fresh strawberries, hulled and halved
Instructions:

Make the Glaze
In a saucepan, whisk together sugar, cornstarch, and water. Bring to a boil over medium heat, stirring constantly until thick (about 3–5 minutes).
Remove from heat, stir in gelatin and lemon juice until dissolved. Let it cool slightly. -
Prepare Strawberries
Wash, dry, and hull strawberries. Cut large berries in half. -
Assemble the Pie
Arrange strawberries in the pre-baked pie crust. Pour warm glaze evenly over strawberries. Use a spoon or brush to coat them well. -
Chill to Set
Refrigerate for at least 2 hours, or until glaze is set and pie is firm. -
Serve
Slice and serve as-is or with whipped cream!
Tips:

Use ripe, firm strawberries for best texture.

Want a fresher pie? Add mint leaves or a layer of vanilla pastry cream under the berries.
