This timeless pudding is made with real vanilla bean (or pure extract), creamy milk, and a touch of sweetness. It’s comforting, simple, and perfect for layering with fruits or enjoying on its own.


Ingredients (Serves 4):

  • 2 cups whole milk (or any milk of choice)

  • ¼ cup granulated sugar

  • 3 tablespoons cornstarch

  • 1 vanilla bean (split and scraped) or 2 teaspoons pure vanilla extract

  • Pinch of salt

  • Optional: 1 tablespoon unsalted butter (for extra richness)


Instructions:

  1. Prepare the Base:
    In a saucepan (off heat), whisk together sugar, cornstarch, and salt. Slowly add the milk, whisking to prevent lumps.

  2. Cook the Pudding:
    Place the saucepan over medium heat and stir constantly. Once the mixture thickens and begins to bubble (about 6–8 minutes), lower the heat and cook for 1–2 more minutes.

  3. Add Vanilla:
    Remove from heat. Stir in the vanilla bean seeds or extract. Add butter if using, and stir until smooth.

  4. Cool and Chill:
    Pour into serving bowls or ramekins. Press plastic wrap directly onto the surface to prevent skin from forming. Chill in the fridge for at least 2 hours.

  5. Serve:
    Top with berries, whipped cream, or a sprinkle of cinnamon.


Tips:

  • For extra richness, use a mix of milk and cream.

  • If using vanilla bean, simmer the pod in the milk for deeper flavor, then remove it before serving.

  • Add a spoonful of jam or caramel sauce for a gourmet twist.
