Ingredients:

4 large russet potatoes

Cold water

2 tablespoons white vinegar (optional but recommended)

Vegetable oil (for frying)

Salt (to taste)

Instructions:

Prep the Potatoes
Wash and peel the potatoes (optional). Cut into thin matchsticks or thick wedges, depending on preference. -
Soak for Crispiness
Place the cut fries into a bowl of cold water and soak for at least 30 minutes (or up to 2 hours). For extra crispiness, add a tablespoon or two of vinegar to the water. -
Dry Thoroughly
Drain the fries and pat completely dry with paper towels. This step is crucial for a crispy result. -
First Fry (Blanching)
Heat oil in a deep fryer or heavy pot to 325°F (165°C). Fry the potatoes in small batches for 4–5 minutes until soft but not browned. Remove and drain on paper towels. -
Second Fry (Crisping)
Increase oil temperature to 375°F (190°C). Fry the blanched potatoes again for 2–4 minutes until golden and crispy. -
Season & Serve
Drain and immediately season with salt (and optional spices like paprika or garlic powder). Serve hot with your favorite sauces!
Tips:

Don’t overcrowd the fryer—cook in batches for best results.

For oven-baked: Toss in oil, bake at 425°F (220°C) for 35–40 minutes, flipping halfway.

Air fryer version: 400°F (200°C) for 15–18 minutes, shake halfway through.
