Ingredients:

  • 4 large russet potatoes

  • Cold water

  • 2 tablespoons white vinegar (optional but recommended)

  • Vegetable oil (for frying)

  • Salt (to taste)

  • Optional: paprika, garlic powder, black pepper


Instructions:

  1. Prep the Potatoes
    Wash and peel the potatoes (optional). Cut into thin matchsticks or thick wedges, depending on preference.

  2. Soak for Crispiness
    Place the cut fries into a bowl of cold water and soak for at least 30 minutes (or up to 2 hours). For extra crispiness, add a tablespoon or two of vinegar to the water.

  3. Dry Thoroughly
    Drain the fries and pat completely dry with paper towels. This step is crucial for a crispy result.

  4. First Fry (Blanching)
    Heat oil in a deep fryer or heavy pot to 325°F (165°C). Fry the potatoes in small batches for 4–5 minutes until soft but not browned. Remove and drain on paper towels.

  5. Second Fry (Crisping)
    Increase oil temperature to 375°F (190°C). Fry the blanched potatoes again for 2–4 minutes until golden and crispy.

  6. Season & Serve
    Drain and immediately season with salt (and optional spices like paprika or garlic powder). Serve hot with your favorite sauces!


Tips:

  • Don’t overcrowd the fryer—cook in batches for best results.

  • For oven-baked: Toss in oil, bake at 425°F (220°C) for 35–40 minutes, flipping halfway.

  • Air fryer version: 400°F (200°C) for 15–18 minutes, shake halfway through.
