Date & Banana Ice Cream
Naturally sweet and incredibly creamy, Date & Banana Ice Cream is a guilt-free treat made with just a few wholesome ingredients. It’s dairy-free, refined sugar-free, and packed with flavor — no ice cream maker required!
Ingredients:

4 ripe bananas, sliced and frozen

6 Medjool dates, pitted and soaked in warm water for 10 minutes

1/4 cup coconut milk (or any plant-based milk)

1/2 teaspoon cinnamon (optional)

1/2 teaspoon vanilla extract (optional)

Pinch of salt
Instructions:

Prepare the Bananas
Peel and slice the bananas, then freeze them for at least 4 hours (or overnight) until solid. -
Soften the Dates
Soak the pitted dates in warm water for about 10 minutes to soften them, then drain. -
Blend the Ingredients
In a food processor or high-speed blender, add the frozen banana slices, softened dates, coconut milk, cinnamon, vanilla extract, and a pinch of salt. -
Process Until Creamy
Blend until smooth and creamy, scraping down the sides as needed. This may take a few minutes depending on your blender. -
Serve Immediately or Freeze
For a soft-serve texture, enjoy immediately. For a firmer scoop, transfer to a container and freeze for 1–2 hours.
Tips:

For a chunkier texture, add chopped dates or nuts after blending.

You can replace coconut milk with almond or oat milk if preferred.
