 Flan (Classic Caramel Custard)



Flan is a rich and creamy baked custard dessert with a layer of soft caramel on top. This smooth and elegant dessert is simple to make and always a favorite.


Ingredients (Serves 6):

For the Caramel:

  • ½ cup granulated sugar

  • 2 tablespoons water

For the Custard:

  • 1 can (14 oz) sweetened condensed milk

  • 1 can (12 oz) evaporated milk

  • 3 large eggs

  • 1 tablespoon vanilla extract


Instructions:

  1. Make the Caramel:
    In a small saucepan over medium heat, combine the sugar and water. Cook without stirring until it melts and turns a deep golden color. Quickly pour the caramel into the bottom of a round baking dish or 6 ramekins, tilting to coat the bottom. Set aside to cool and harden.

  2. Make the Custard:
    In a bowl, whisk together the eggs, condensed milk, evaporated milk, and vanilla until smooth and well combined.

  3. Assemble:
    Pour the custard mixture over the set caramel in the baking dish or ramekins.

  4. Bake in a Water Bath:
    Preheat oven to 175°C (350°F). Place the flan dish in a larger baking pan and fill the outer pan with hot water to reach halfway up the sides of the flan dish.
    Bake for 50–60 minutes, or until the center is set but slightly jiggly.

  5. Cool and Chill:
    Let cool at room temperature, then refrigerate for at least 4 hours or overnight.

  6. Serve:
    Run a knife around the edges of the flan. Invert onto a plate so the caramel flows over the top. Serve chilled.


Tips:

  • Don't overcook the caramel; it can become bitter.

  • Strain the custard mixture for an ultra-smooth texture.

  • Flan tastes even better after a day in the fridge as the flavors develop.
