Frozen Yogurt Bark
This chilled snack is made by spreading yogurt on a tray, topping it with fresh fruit, nuts, and a drizzle of honey, then freezing it until firm. Break it into pieces and enjoy it straight from the freezer.
Ingredients:
-
2 cups plain or vanilla yogurt (Greek-style for thickness)
-
1–2 tablespoons honey or maple syrup (optional, to sweeten)
-
½ cup fresh berries (blueberries, strawberries, raspberries)
-
2 tablespoons granola
-
1–2 tablespoons chopped nuts (pistachios, almonds, or walnuts)
-
Optional toppings: shredded coconut, dark chocolate chips, chia seeds
Instructions:
-
Prepare the Base:
Line a baking sheet or shallow tray with parchment paper.
In a bowl, mix the yogurt with honey or sweetener if using. Spread the yogurt evenly on the parchment in about ½-inch thickness. -
Add Toppings:
Sprinkle the berries, granola, nuts, and any other toppings evenly over the yogurt. -
Freeze:
Place the tray in the freezer for 3–4 hours, or until completely firm. -
Break and Serve:
Once frozen, remove from the freezer and break into bark-like pieces. Serve immediately or store in an airtight container in the freezer.
Tips:
-
Use thick yogurt (like Greek yogurt) for best results and less iciness.
-
Add fruit just before freezing to keep it fresh-looking.
-
Great for iftar or a post-summer lunch snack.
-
Make it dairy-free by using coconut or almond yogurt.
