Ingredients (Serves 2–3)

2 medium tomatoes, chopped or cut into wedges

1 cucumber, sliced or chopped

1 small red onion, thinly sliced

1 green bell pepper, sliced (optional)

½ cup Kalamata olives (pitted if preferred)

100g feta cheese, cubed or crumbled

1 teaspoon dried oregano

Salt and black pepper, to taste
Dressing (No Wine Vinegar):

3 tablespoons olive oil

1 tablespoon lemon juice or apple cider vinegar (halal)

½ teaspoon Dijon mustard (optional, for extra tang)

1 small garlic clove, minced (optional)
Instructions

Prepare the vegetables:
Wash and chop the tomatoes, cucumber, onion, and bell pepper. Place in a large bowl. -
Add olives and feta:
Add Kalamata olives and top with crumbled or cubed feta cheese. -
Make the dressing:
In a small bowl or jar, whisk together olive oil, lemon juice (or apple cider vinegar), mustard, garlic, salt, and pepper. -
Toss and serve:
Pour dressing over the salad. Sprinkle with oregano. Toss gently and serve immediately.

Feta cheese: Use a halal-certified feta if needed.

No lettuce needed: Traditional Greek salad doesn’t include lettuce.
