500g boneless, skinless halal chicken breasts or thighs

Juice and zest of 1 lemon

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme or rosemary

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions

Prepare the marinade by mixing olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper in a bowl.

Add the chicken to the marinade, coating it well. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates or pan.

Grill the chicken for 5 to 6 minutes per side (depending on thickness) until fully cooked and golden with grill marks.
