Ingredients:

For the chicken:

  • 4 bone-in, skin-on chicken thighs or drumsticks (or boneless if preferred)

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

For the BBQ sauce (or use store-bought):

  • ½ cup ketchup

  • 2 tablespoons brown sugar

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon mustard

  • ½ teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper


Instructions:

  1. Marinate (Optional)
    Rub the chicken with olive oil, salt, pepper, garlic powder, and paprika. Let marinate for at least 30 minutes.

  2. Prepare the BBQ Sauce
    In a small saucepan, combine all BBQ sauce ingredients. Simmer over low heat for 5–7 minutes until thickened. Set aside.

  3. Grill Method:

    • Preheat grill to medium heat.

    • Grill chicken for 20–25 minutes, turning occasionally.

    • Brush generously with BBQ sauce and grill another 10–15 minutes until fully cooked and caramelized (internal temp: 165°F / 74°C).

    OR Oven Method:

    • Preheat oven to 400°F (200°C).

    • Bake chicken on a lined baking tray for 25 minutes.

    • Brush with BBQ sauce and bake another 10–15 minutes until nicely glazed and slightly charred.

  4. Serve
    Let rest 5 minutes before serving. Garnish with fresh parsley or chives.


Serving Suggestions:

  • Pair with coleslaw, corn on the cob, mashed potatoes, or cornbread.

  • Add grilled veggies or a fresh garden salad for a complete meal.
