Lime Rickey
A classic soda fountain drink, the Lime Rickey is tangy, sparkling, and lightly sweet. It’s made with fresh lime juice, soda water, and simple syrup — no alcohol, just pure refreshment.
Ingredients (Serves 2)

Juice of 2 fresh limes (about ¼ cup)

1–2 tablespoons simple syrup (or sugar, to taste)

1 ½ cups chilled sparkling water or club soda

Ice cubes

Lime wedges and mint leaves, for garnish (optional)
Instructions

Juice the Limes
Squeeze the limes and strain out the seeds. -
Mix the Base
In each glass, stir together the lime juice and syrup (or sugar) until well dissolved. -
Add Ice and Soda
Fill glasses with ice. Top with sparkling water or club soda and stir gently. -
Garnish and Serve
Add lime wedges or mint for a decorative and aromatic touch. Serve immediately.

Use purple grape juice for a fruity twist (a “Grape Lime Rickey”).
