 Thai Fried Rice

Thai Fried Rice, or Khao Pad, is a comforting stir-fried rice dish made with fragrant jasmine rice, vegetables, and your choice of protein, flavored with fish sauce, soy sauce, and a touch of lime. It’s quick, versatile, and absolutely delicious.

Ingredients

  • 3 cups cooked jasmine rice (preferably day-old and chilled)

  • 2 tablespoons oil (vegetable or sesame)

  • 2 eggs, lightly beaten

  • 2 garlic cloves, minced

  • 1 small onion, diced

  • 1/2 cup chopped vegetables (carrots, peas, bell pepper, etc.)

  • 1/2 cup cooked chicken, shrimp, or tofu (optional)

  • 1 tablespoon soy sauce

  • 1 tablespoon fish sauce (or use more soy sauce for a vegetarian version)

  • 1 teaspoon sugar

  • Ground white or black pepper, to taste

  • Fresh lime wedges (for serving)

  • Green onions and cilantro (for garnish)

  • Sliced cucumber and tomato (traditional sides)

Instructions

1. Prepare the Rice
Use cold, day-old rice for best texture. If using freshly cooked rice, let it cool completely and fluff it well to prevent clumping.

2. Scramble the Eggs
Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove and set aside.

3. Stir-Fry Aromatics
In the same pan, add more oil if needed. Sauté garlic and onion for 1–2 minutes until fragrant and slightly golden.

4. Add Veggies and Protein
Toss in your vegetables and protein of choice. Stir-fry until heated through and veggies are just tender.

5. Add the Rice
Add the rice to the pan and break up any clumps. Stir well to mix everything evenly.

6. Season
Add soy sauce, fish sauce, sugar, and pepper. Stir-fry for another 2–3 minutes, allowing the rice to soak up all the flavors. Add the scrambled eggs back in and mix gently.

7. Garnish and Serve
Top with chopped green onions and cilantro. Serve hot with lime wedges, sliced cucumber, and tomato on the side.

Tips

  • Use jasmine rice for authentic Thai aroma and texture.

  • Don’t overcrowd the pan — cook in batches if needed.

  • Add a dash of chili flakes or sriracha for a spicy version.

Serving Suggestions

Serve as a main dish or pair with Thai spring rolls, soup, or salad for a complete meal. Great for lunch, dinner, or meal prep.
