Chicken Chow Mein

Ingredients (Serves 3–4)
For the chicken and noodles:

250g halal chicken breast or thigh, thinly sliced

200g chow mein or egg noodles (or spaghetti)

2 tablespoons vegetable oil

2 garlic cloves, minced

1 small onion, sliced

1 carrot, julienned
-
1 cup cabbage, shredded

½ red bell pepper, sliced

2 green onions, chopped
For the sauce:

3 tablespoons halal soy sauce
-
1 tablespoon oyster sauce (halal-certified or use mushroom sauce as a substitute)

1 teaspoon sesame oil
-
1 teaspoon sugar
-
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions

Cook the noodles:
Boil noodles according to package instructions. Drain and rinse under cold water. Toss with a little oil to prevent sticking. -
Make the sauce:
In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and cornstarch slurry if using. -
Cook the chicken:
Heat 1 tablespoon oil in a wok or pan. Add chicken and cook until browned and fully cooked. Remove and set aside. -
Stir-fry vegetables:
Add remaining oil, then stir-fry garlic, onion, carrot, and bell pepper for 2–3 minutes. Add cabbage and stir until slightly wilted. -
Combine everything:
Return chicken to the pan. Add cooked noodles and pour in the sauce. Toss everything together over medium-high heat for 2–3 minutes until well coated and heated through. -
Serve:
Garnish with chopped green onions and serve hot.

Use halal oyster sauce or replace it with mushroom stir-fry sauce.

Feel free to add mushrooms, bean sprouts, or snap peas.
