Summary : 

Chicken Chow Mein is a classic Chinese stir-fried noodle dish made with seasoned chicken, vegetables, and noodles tossed in a rich, soy-based sauce. This halal version uses no alcohol or non-permissible ingredients and is perfect for a quick and satisfying meal.


Ingredients (Serves 3–4)

For the chicken and noodles:

  • 250g halal chicken breast or thigh, thinly sliced

  • 200g chow mein or egg noodles (or spaghetti)

  • 2 tablespoons vegetable oil

  • 2 garlic cloves, minced

  • 1 small onion, sliced

  • 1 carrot, julienned

  • 1 cup cabbage, shredded

  • ½ red bell pepper, sliced

  • 2 green onions, chopped

For the sauce:

  • 3 tablespoons halal soy sauce

  • 1 tablespoon oyster sauce (halal-certified or use mushroom sauce as a substitute)

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)


Instructions

  1. Cook the noodles:
    Boil noodles according to package instructions. Drain and rinse under cold water. Toss with a little oil to prevent sticking.

  2. Make the sauce:
    In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and cornstarch slurry if using.

  3. Cook the chicken:
    Heat 1 tablespoon oil in a wok or pan. Add chicken and cook until browned and fully cooked. Remove and set aside.

  4. Stir-fry vegetables:
    Add remaining oil, then stir-fry garlic, onion, carrot, and bell pepper for 2–3 minutes. Add cabbage and stir until slightly wilted.

  5. Combine everything:
    Return chicken to the pan. Add cooked noodles and pour in the sauce. Toss everything together over medium-high heat for 2–3 minutes until well coated and heated through.

  6. Serve:
    Garnish with chopped green onions and serve hot.


Notes

  • Use halal oyster sauce or replace it with mushroom stir-fry sauce.

  • Feel free to add mushrooms, bean sprouts, or snap peas.

  • For a spicier version, add chili garlic sauce or red pepper flakes.
