Zucchini Pasta
Zoodles, or zucchini noodles, are a fresh and healthy alternative to traditional pasta. They're quick to make, low in carbs, and perfect for tossing with your favorite sauces, from marinara to pesto.
Ingredients:

2–3 medium zucchinis

1 tablespoon olive oil

2 garlic cloves, minced

Salt and pepper, to taste

Optional toppings: grated Parmesan, cherry tomatoes, fresh basil, chili flakes
Instructions:
1. Spiralize the Zucchini
Use a spiralizer, julienne peeler, or mandoline to turn the zucchini into long noodle-like strands. Pat dry with a paper towel to reduce excess moisture.
2. Sauté the Zoodles
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Add the zoodles and toss gently for 2–3 minutes, just until tender but still firm. Avoid overcooking to prevent sogginess.
3. Season and Serve
Season with salt and pepper to taste. Remove from heat and serve immediately with your choice of sauce or toppings.
